Loya: Taj West End – Overview

Loya is the newest dining destination at the lovely Taj West End, a green oasis amid the noise and bustle of Bengaluru. The restaurant makes excellent use of its setting, with water features, a champagne lounge and al fresco seating. Indoors, much effort and attention to details have resulted in an aesthetically pleasing dining room.

The menu is a showcase for the cuisines of North India, from Punjab to Himachal Pradesh and Kashmir. Taj chefs have spent years researching the ingredients, cooking techniques and dishes of these regions. The outcome is a line-up that consciously aims to break the template of North Indian restaurants as we know them.

I grazed through a tasting menu when I went here for lunch within days of Loya opening. There was Wadi Ark, a thin, tart soup with drumstick pulp and Amritsari wadi, an excellent appetizer. The Multani Gobhi was a small, whole cauliflower baked in clay and served with a tangy coriander dip, a good choice for vegetarians.

The Gosht ke Lazeez Pasliyan is a star dish on the menu. A special cut of mutton is spiced with earthy, complex kebab chini and patthar ka phool and comes bearing a waft of charcoal smoke.

I then ate a Gola Paratha, a mound of flaky layers, with Kathal Baingan Bharta, in which the mashed brinjal gets extra texture and flavour from tender jack. I was happy to eschew jaded paneer in any form. Alongside, there was Kangra Khodiya Gosht, a Pahadi favourite in which tender mutton gets a dark intensity from charred walnut ink.

The sweets and desserts to end the Loya meal are truly inspired. I loved the Doodh Jalebi; the milk in kesar, chuara and pista flavours in mini milk cans and the jalebis warm and crisp. It took me back to Jodhpur on a winter night. I was happy.
