The welcome addition to Delhi’s restaurant-scape is located at a hard-to-miss location right on MG Road, in one of the single-storeyed structures that overlook the main road. Plenty of parking right now and a restaurant that shows every sign of becoming a landmark before long: easy access, a location in Delhi but just 6 kms short of the Gurgaon border, large, light, airy space with the minimum of fuss and the absence of needless ‘elements’ that serve only to clutter up space and give the impression of being more formal than it warrants. Thankfully, Bomba is free from pretentiousness.

It is the food here that attracts. Half the menu is pizzas of the Napolitan variety, believed to be the original, eaten by the citizens of the South Italian city of Naples; the other half is a variety of tacos. There are no long, fussy menus with enough sections to thoroughly confuse diners. There is no alcohol: all the focus is on the food, and the promotors, who are seasoned restaurateurs, can be trusted to know what they are doing. The pizzas are large, with puffed-up edges with the trademark scorch marks on them. They look supremely rustic with sparingly used toppings. As any native of Naples will confirm, a pizza is about the crust; not the toppings. Though a Napolitan pizza in the city of its origin will limit itself to just three toppings, Bomba has a variety, including the classic Margarita (named for the then queen, in the days when Italy was a monarchy). My favourite was the Parma (₹945) with Italian ham, rocket leaves, reduced balsamico and figs. The vegetarian options are at least as sophisticated, with as many cheeses as you wish, or none at all! Each of the tacos are served in fours: useful for a group; inconvenient for a couple, because they would not last once packed. Charred corn (₹625) was outstanding because of the verisimilitude to a real Mexican taco. However, the genius who put together the menu has really played with flavours and there is something spicy, sour, sweet, mild and crunchy in each of the fillings.
